Abstract - Immunoanalysis and security of products of animal origin
Immunoanalysis is playing a more and more important role as a method to determine whether or not toxic substances are present in foodstuffs. This method has not been fully verified but at the least, as a preliminary method to test suspect samples, it offers a substantial saving when compared with the other standard techniques used in toxicology. In drug testing for sporting events, although almost all analysis is done by mass spectrometer, it appears that other methods are based on the interaction with the cell metabolism of doping agents.

Résumé
L'immuno-analyse prend une place de plus en plus importante dans la détermination des produits toxiques pouvant être présents dans les aliments. Ces méthodes ne sont pas toutes validées mais sont toujours une aide, au moins pour un tri préalable des échantillons suspects, avec une économie substantielle par rapport aux techniques conventionnelles utilisées en toxicologie. Dans le contrôle des épreuves sportives, si pratiquement toutes les analyses se font par spectrométrie de masse, il apparaît d'autres méthodes basées sur l'interaction sur le métabolisme cellulaire des agents dopants.
